I bought these zip top bags at <a href="http://www.worldmarket.com">World Market</a> a few months ago just to make my own popsicles. I LOVE popsicles, but sometimes it can get pricey if not on sale or they filled up with extra fillers that's just not good for you. I figure, how hard can it be to make your own?<BR><BR>
Had some strawberries that needed to be used up, so I quickly pureed some fresh strawberries with some water and pushed through a sieve. Added in some Dasani apple flavor sparkling water. It was very icey and the flavor wasn't as strong as I would of liked. This was just my first time, so I have still lots of time to improve and play around with flavors.<BR><BR>

<b>Strawberry Apple Popsicles</b><BR><BR>
1-2 cups strawberries, hulled<BR>
1 TBsp sugar<BR>
1 cup of water<BR>
1/2 can of Dasani apple flavored sparkling water<BR><BR>
Puree strawberries with about a cup of water and sugar. Push through a sieve.<BR>
Add 1/2 a can of Dasani apple flavored sparkling water. Let it fizz out a bit before putting it in the zip top bags.<BR><BR>

On the first day of summer, all I wanted to do was BAKE BAKE BAKE! Surprisingly, the sun was out and about, but I didn't have anywhere to go. I actually started off trying to make french macarons, but it was an epic fail. I've never baked something where it didn't turn out, so I was pretty disappointed. The batter came out too runny, it never got its "feet" and when I baked it, it got mutant feet and spread into each other.<BR><BR>
I whipped up some of these cookies just to try and I am now planning to bring them to Bunco night on post. They turned out pretty sweet. I added way more coconut than the recipe intended, but I think I would like to toast them next time and add less toffee chips (I kind of added the whole bag).<BR><BR>

Coconut Toffee with White Chocolate Chip Cookies<BR>

1 cup unsalted butter, softened<BR>
3/4 cup granulated sugar<BR>
3/4 cup packed brown sugar<BR>
1 egg<BR>
1/2 tsp. vanilla extract<BR>
2 1/4 cups all purpose flour<BR>
1 tsp. baking soda<BR>
1/2 tsp. salt<BR>
1 pkg toffee bits<BR>
1 cup white chocolate chips<BR>
1 cup shredded coconut<BR><BR>
Preheat oven to 375 degrees.<BR><BR>
Cream butter and both sugars together, then add egg and vanilla, stir.<BR><BR>
Mix in flour, baking soda, and salt just til combined. Stir in toffee bits, white chocolate and coconut.<BR><BR>
Drop dough by rounded teaspoonfuls onto ungreased cookie sheet. Bake for 10-12 minutes or until lightly golden. 1/2 large watermelon, cup into chunks<BR>
4 cups cold water, divided<BR>
2 fresh lime juice<BR>
1-2 tablespoon raw honey<BR>
Ice cubes <BR><BR>
Cut the watermelon flesh from the rind. <BR>
In a blender, process half the watermelon pieces with 1 cup of water until smooth. <BR>
Pour through a strainer into a pitcher. <BR>
Repeat the process with the remaining melon and water. <BR>
Stir in the lime juice and honey.<BR>
Pour into ice-filled glasses<BR><BR>

I admit to be being a lazy cook and I usually forget to eat vegetables. Or even fruit. I don't juice or make green smoothies as much as I use to. Mainly because I am too lazy to have to clean out the juicer on the daily. You guys, I don't like doing dishes and I swear they just keep piling up and seems to never stop!<BR><BR>
For awhile there, I was actually <i>losing weight</i>! I think ever since I did the sugar detox, my constant need for munchies subsided and my body was feeling good. Really good. That was a few weeks ago. I'm sure I've gained some back and now I'm trying harder to eat better, consume more vegetables and this was the perfect meal to start with.<BR><BR>
Lazy cooks are all about simple and quick meals. Pre-packaged salad, cut up some veggies of your choice, hard boil some eggs (optional), store bought hummus and a quick marinated chicken. Easy peasy and it was very filling!<BR><BR>

<b>Vegetable Salad with Hummus and Lemon Herb Chicken</b><BR><BR>
<u>Salad:</u><BR><BR>
1pkg salad mix of your choice<BR>
1/2 cucumber, peeled (unless it's organic) and sliced<BR>
2 roma tomatoes, deseeded and diced<BR>
1/2 yellow bell pepper, sliced<BR>
2 hard boiled eggs<BR>
4 baby carrots, sliced<BR>
4 TBsp hummus<BR><BR>
Plate and set aside.<BR><BR>
<u>Chicken:</u><BR><BR>
1 chicken breast, sliced in half<BR>
salt & pepper<BR>
2 TBsp evoo<BR>
1 clove garlic, minced<BR>
1/2 tsp dried oregano<BR>
1/2 tsp dried thyme <BR>
Zest of 1 lemon<BR><BR>
Marinade chicken in a ziplock bag for about 1-2 hours. Cook on stove top til done.<BR><BR>
Plate chicken onto salad and squeeze lemon juice all over.<BR><BR>

Awhile back, my friend Ana asked my friend Noel and I to go on a 10 day sugar detox. In the end, Ana backed out since she just had a baby, is breastfeeding and was hesitant on it. With that said, Noel and I went forward with the detox and let me just say, it was not fun. At all. We had salami and cheese parties, drank lots of water and cried about not being to eat fruit. The only fruit allowed was granny smith apples, green tipped bananas and grapefruit, but only one serving per day. I am a huge snacker, so not allowing to snack was a tough one. I had an apple left and looked through the <a href="http://www.amazon.com/The-21-Day-Sugar-Detox-Naturally/dp/1936608111">21 day sugar detox</a> book for a dessert recipe. The recipe itself was extremely easy, but I wasn't a huge fan of it, but since I was on a detox, it helped curbed my sweet tooth for a bit. If you like tart, this apple crumble is for you!<BR><BR>

<b>Granny Smith Apple Crumble</b><BR>

<u>Filling:</u><BR><BR>
4 green apples, peeled and thinly sliced<BR>
juice of 1/2 lemon<br>
1 tsp ground cinnamon<BR><BR>
<u>Topping:</u><BR><BR>
1 1/4 cups almond meal<BR>
1/4 cup unsalted butter<BR>
2 tsp ground cinnamon<BR>
pinch of sea salt<BR>
1 TBsp unsalted butter, melted, for the pan<BR><BR>
Preheat oven to 350F<BR><BR>
<b>Make the filling:</b>
In a mixing bowl, toss apples with lemon juice and cinnamon.<br><BR>
<b>Make the topping:</b>
Mix together the almond meal, butter, cinnamon and salt until completely incorporated.<BR><BR>
Brush bottom and sides of a 9x9 dish with the melted butter.<BR><BR>
Place the apples in the baking dish and cover evenly with the topping.<BR><BR>

My friends and I went up to the <a href="http://www.tulipfestival.org/">Skagit tulip festival</a> a couple months ago and I got to finally meet <a href="http://www.pursuitofpoppiness.com/">Jane</a> in person! The tulip fields was a good 3 hour drive including crazy traffic just getting there. We spent some time chatting, walking around the fields, taking billion photos of the field and soaking up some of that sun!<BR><BR>

The first time I had these fruit tarts was at my friend Jeannie's engagement party and I'm not going to lie, I ate a good handful of them (she made mini fruit tarts). She came up to the PNW the end up April and we made these before she left. The recipe is extremely easy and you can make these in smaller tart pans, a large tart pan (bake crust longer) or bake crusts in cupcake tins or even mini cupcake tins for bite size tarts. Use whatever fruit you desire, but I highly recommend putting the fruits on the day you plan to serve.<BR><BR>

<B>White Chocolate Fruit Tart</b><BR><BR>
<u>Crust:</u><BR>
1 1/2 stick butter, room temp<BR>
1/2 cup powder sugar<BR>
1 1/2 cup all-purpose flour<BR><BR>
<u>Filling:</u><BR>
10oz bag of white chocolate chips, melted<BR>
1/4 cup heavy whipping cream<BR>
8oz package of cream cheese<BR><BR>
<u>Topping:</u><BR>
Strawberries, Blueberries, Raspberries<BR><BR>
Preheat oven to 300F.<BR><BR>
Cream butter with powder sugar until fluffy, then add in the flour. Mix until fully incorporated. Flatten dough into either a large tart pan or 6 medium sized tart pan. Bake 25-30 minutes until edges are golden brown. Do not over bake. Cool on rack before filling.<BR><BR>
While the tart crusts are baking, melt your white chocolate chips using the double broiler method. Mix cream cheese and whipping cream together. Add in melted white chocolate chips and mix until incorporated.<BR><BR>
Spread filling onto tart crust and top with your favorite berries.<BR><BR>

Happy Easter everyone! We usually do not celebrate Easter and the dogs wouldn't be keen in looking for Easter eggs. Since my husband is currently deployed, I decided to crash my friend Ana's Easter instead. We're not doing the usual Easter dinner with ham and the works. Instead, my friend Noel jokingly requested for a nacho bar buffet. Noel is making deviled eggs and I've settled for dessert as usual. Cookies didn't seem fitting, but after talking to Noel, we've decided cheesecake would be fitting.<BR><BR>
I've only made cheesecake twice in my life, but thankfully this was an easy recipe and it turned out delicious! I'm not a fan of graham cracker crust, so I switched it to buttery shortbread and it's even better!<BR><BR>

<b>Lemon Raspberry Cheesecake Bars</b><BR>

<u>For the Crust:</u><BR><BR>
1 1/2 cups shortbread cookies<BR>
4T butter<BR><BR>
<u>For the Cheesecake:</u><BR><BR>
16 ounces cream cheese- room temperature<BR>
1/2 cup sugar<BR>
2 tablespoons lemon juice<BR>
Zest of a lemon<BR>
4 tablespoons milk<BR>
2 eggs- room temperature<BR>
1 teaspoon vanilla extract<BR><BR>
<u>For the Raspberry Swirl:</u><BR><BR>
4 oz. of fresh raspberries (about 1/2 cup)<BR>
2 tablespoons sugar<BR><BR>
Preheat oven to 350F. Line an 8x8 baking pan with parchment paper. Set aside.<BR><BR>
<u>For the crust:</u><BR><BR>
In a medium sized bowl mix together the crumbs and butter with a spoon until moist. Press into the prepared pan and bake for about 10 minutes or until crust is set around the edges.<BR><BR>
<u>Make the filling:</u><BR><BR>
Beat together the white sugar, and cream cheese until smooth.<BR>
Add the egg, milk, lemon juice, and vanilla and beat until smooth and creamy. Spread filling mixture over baked crust.<BR><BR>
<u>For the Raspberry Purée:</u><BR><BR>
In a food processor or blender, purée the raspberries until smooth. Press through a fine mesh sieve, getting as much liquid out as possible. Discard the solids. Stir in the sugar.<BR><BR>
Dot the raspberry mixture over the filling and use a toothpick or skewer to swirl together.<BR><br>
Bake for 30 minutes or until set around the edges and slightly jiggly in the center. Poor guy missed Frankie's first birthday (he was in Iraq) and now his 5th. Probably some in between.<BR><BR>

His farts surprises him. Human farts are scarier. He hates the water, cleans his paws like a cat, bath time is the end of the world to him. He's an amazing big brother and lets Maggie do whatever she wants to him. Frankie is an amazing dog and we are ever so blessed to have him in our lives. <b>Happy birthday Frankie doodle!</b><BR><BR>

Anyways, one of his requested meals was beef stew. I've tried a couple recipes in the past, but I think this is by far my favorite. Maybe it's from the added french onion soup or instead of making a slurry, the recipe calls for instant potatoes. This one was a huge hit for us and I can't wait to make it again when he comes back home.<BR><BR>
<b>Beef & Potato Stew</b><br>

1 1/2 cup reduced sodium chicken broth<BR>
1- 10.5 oz can condensed French Onion soup<BR>
1 cup water<BR>
3 Tbsp tomato paste<BR>
1 Tbsp reduced sodium soy sauce<BR>
3 pounds stew beef<BR>
3/4 tsp kosher salt<BR>
1/2 tsp black pepper<BR>
1 1/2 pounds baby Yukon Gold potatoes, scrubbed and cut in half or quarters<BR>
1 medium onion, large dice cut<BR>
3 medium carrots, peeled, cut into large chunks<BR>
additional salt and pepper, to taste<BR>
1/4 cup potato flakes (instant mashed potato), as need to thicken stew<BR><BR>
1. Add chicken broth, onion soup, water, tomato paste, and soy sauce into bowl of slow cooker. Whisk to break up and distribute tomato paste.<BR><BR>
2. In a large bowl, season beef with salt and pepper. Mix to combine.<BR><BR>
3. Add seasoned beef, potatoes, onion, and carrots to slow cooker. Cover with lid and cook on high for 6-7 hours until the beef is tender.<BR><BR>
4. Stir in 1/4 cup potato flakes to thicken soup. Add additional potato flakes 1 tablespoon at a time to achieve desired thickness. Season with additional salt and pepper to taste. <BR><BR>

While my MIL has been here, she's made us some pancit and my favorite, her lumpias. Today, I'm sharing with you one of my favorite Filipino desserts, Cassave Cake.<BR><BR>

2 16oz defrosted shredded cassava (check the frozen section of your Asian market)<BR>
1 cup coconut milk<BR>
1 cup evaporated milk<BR>
1 cup sweetened condensed milk<BR>
1/2-1 cup granulated sugar<BR>
1-2 cups sweetened shredded coconut, optional<BR><BR>
Preheat oven to 350F.<BR><BR>
Mix everything together with a whisk until well blended.<BR><BR>
Pour into a greased 13x9 glass pan.<BR><BR>
Bake for 30 minutes and add remaining condensed milk on top. Bake an extra 5 minutes.<BR><BR>

I went to my first <i>ever</i> Super Bowl Sunday this past weekend at my friend Ana's and I was asked to bring a dessert. I decided to bring a fruit platter with <a href="http://ghoth.blogspot.com/2013/08/marshmallow-fluff-fruit-dip.html">marshmallow fluff dip</a> and a side of cookie butter, but I also wanted to bring something chocolatey.<BR><BR>
I was instantly hooked to a dozen recipes while browsing <a href="http://www.bakersroyale.com">Bakers Royale</a> and decided that since I was short on time, I would go with <a href="http://www.bakersroyale.com/bars-and-cookie-bars/twix-cookie-dough-cheesecake-bars/">twix cookie dough cheesecake bars</a>. I loved that the recipe used pre-made ingredients for those that are short on time (like I was) but I'm sure it would taste even better if you used homemade cookie dough with homemade caramel.<BR><BR>
The Twix cookie bar turned out really sweet, but oh so good. Great with a glass of milk. Even though I was filled to the brim with Ana's delicious homemade nacho bar and grazing at the fruit and veggie tray all through the game, I was able to stuff a small piece of it. I literally could not move for hours after that!<BR><BR>
Highly recommend making these or pretty much anything on <a href="http://www.bakersroyale.com">Bakers Royale's</a> page. Her desserts do not disappoint!<BR><BR>

<b>Twix Cookie Bars</b><BR>
<small>recipe from <a href="http://www.bakersroyale.com/bars-and-cookie-bars/twix-cookie-dough-cheesecake-bars/">bakers royale</a></small><BR><BR>
<u>Crust and topping</u><BR><BR>
one 16-oz. package of ready-made chocolate cookie dough<BR>
one 16-oz. pacakage of ready-made chocolate chip cookie dough<BR>
5 Twix, king size packages or 8 regular packages<BR><BR>
<u>Cheesecake layer</u><BR><BR>
8oz. cream cheese, room temperature<BR>
1/3 cup sugar<BR>
1 egg<BR>
1 teaspoon vanilla<BR>
1/3 cup caramel sauce (<i>I used the one from Trader Joe's</i>)<BR>
1/3 cup mini chocolate chips (for topping)<BR><BR>
Create a sling by lining the pan with foil so that there is a one inch overhang on each side. Cover foil with bake spray. <BR><BR>
Heat oven to 375 degrees F.<BR><BR>
<u>Cookie Crust:</u><BR><BR>
Flatten chocolate fudge cookie dough to a 1/4 inch thickness using a rolling pin. Pinch off chocolate chip cookie dough into pieces and then drop it on top of fudge cookie dough. Using a rolling pin roll chocolate chip cookie dough into chocolate fudge cookie dough; set aside.<BR><BR>
<u>Cheesecake:</u><BR><BR>
Add cream cheese, sugar, egg, vanilla and caramel sauce into a bowl and beat until blended. Set aside.<BR><BR>
<u>Assembly:</u>
Cover the bottom of the pan with a little more than three-quarters of flatten dough. Set aside remaining dough to sprinkle on top. Place Twix bars side-by-side directly on top of crust. <BR><BR>
Pour cheesecake mixture on top. Crumble remaining cookie dough and sprinkle on top of cheesecake layer along with remaining 1/4 cup of mini chocolate chips all over top.<BR><BR>
Bake for about 30-40 minutes at 375 degrees F. Remove from oven set on wire rack to cool.<BR><BR>

10 years ago, I married this amazing guy. With tears in his eyes, he proposed to me the night before he left for basic training. We spent the next many months, writing letters, waiting for his phone calls and he'd surprise me with flowers at work. After basic, he got his first duty station in Korea which was a million miles away. Many calling cards purchased and late late night phone calls. He came home on leave just so we can get married. After being married for a mere 2 weeks, he had to return to Korea for another 6 months.<BR><BR>

I haven't received a vox box in forever and was excited when I was chosen for a violet vox box. NYM clean freak dry shampoo is absolutely one of my favorites because it's affordable and gets the job done. I love me some nail polishes, but was disappointed in the color I received- <A href="http://www.sallyhansen.com/products/nails/nail-color/triple-shine+?cid=sem_FY14SallyHansen_Google">Sally Hansen in Play Koi</a>. I already own a similar color and honestly, I haven't even applied it. I think I will be gifting this to a friend or put it up in a giveaway.

Hope everyone has had a wonderful holiday! I've been so off my game this year and since I wasn't planning to ship any cookie gifts to my family and friends, I didn't bake anything special until the other night. I had picked up <a href="http://www.worldmarket.com/product/andes+peppermint+crunch+baking+chips.do">Andes peppermint crunch baking chips</a> earlier this year and have been dying to use it since. With the holiday drinks out in full force, I wanted to make a Starbucks inspired peppermint mocha cookie and was lucky to discover Tracey's blog!<BR><BR>
My butter didn't come to complete room temperature, so my dough ended up being a little crumbly. I recommend putting the dough in the fridge for a good 30 minutes before scooping and dip the top of the dough in a plate filled with the peppermint baking chips before baking.<BR><BR>

Peppermint Mocha Cookies<BR>

2 1/2 cups all-purpose flour<BR>
3/4 cup unsweetened cocoa powder<BR>
2 tablespoons instant coffee granules<BR>
2 teaspoons cornstarch<BR>
1 1/2 teaspoon baking soda<BR>
1 teaspoon salt<BR>
1 cup (2 stick) unsalted butter, at room temperature<BR>
1 cup packed light brown sugar<BR>
1/2 cup granulated sugar<BR>
1 large egg plus 1 egg yolk, at room temperature<BR>
2 teaspoons vanilla extract<BR>
1 teaspoon peppermint extract<BR>
1 1/2 cups peppermint baking chips<BR>
1/2 cup semi-sweet chocolate chips<BR>
Jumbo marshmallows, cut in half (optional)<BR><BR>
Preheat oven to 350 F. Line two baking sheets with parchment paper.<BR><BR>
In a medium bowl, sift the flour, cocoa powder, instant coffee granules, cornstarch, baking soda, and salt together. Cream the butter and both sugars on medium speed until light and fluffy, about 3 minutes. Beat in the egg and egg yolk, and then the vanilla and peppermint extracts. With the mixer on low, gradually add the dry ingredients, beating just until combined. Mix in the peppermint baking chips and chocolate chips.<BR><BR>
Bake for 8 minutes and add half of the marshmallow. Bake an extra 3 minutes or until the edges of the cookies are set (don't overbake!). Transfer the baking sheets to wire racks and let the cookies cool for a few minutes then remove the cookies to the wire rack to cool completely.<BR><BR>

I received a lovely surprise from Julie last week and I couldn't wait to dig in! The cookies were soft and delicious, but truthfully, it's their <i>butter cream</i> that takes the cookie. Her butter cream is always so light and fluffy and quite addicting really. I'm serious. I ended up eating the cookies by itself and just dipped a spoon into the butter cream when no one is watching... or when the husband is sleeping.<BR><BR>

Thursday, Dec 5th, I received a text from my friend Ana around midnight asking if I was awake. I was. She told me <a href="http://thepioneerwoman.com/">THE PIONEER WOMAN</A> was having a book signing in Seattle that same day. I swear my heart skipped a beat, my hands got shaky and I asked her if we're going. When I woke up that morning, I texted her to pinch me because I could of sworn she said we were going to meet Ree Drummond that night.<BR><BR>

We left post around 230/3PM to avoid Seattle's crazy traffic and we made it into the line at 430PM. It was ridiculously cold and thankfully the doors opened at 5-ish and they had a bathroom. Wintery cold + a good hour or so of driving + Ana is pregnant and I accidentally forgot to feed her lunch? Disaster slowly waiting to happen. Thankfully I had a few snacks in my purse. We waited for what felt like forever....<BR><BR>

Then, there she was. Shiny like a new toy, or her sweating profusely. She went on to explain her back story which I waited for impatiently... I've read back her blog entries in the past and I just wanted to meet her already! I have to say, getting <s>people</s> adults to stand in a single file line is probably the worst idea ever. Adults like to stand in a massive blob pretending to listen. No joke. Ana and I slowly migrated from one side to the next pretty swiftly and after about 20 minutes or so, we got to meet her!!<BR><BR>

At first, I kinda just stood there looking at the back of her head. It was pretty chaotic where she sat, one lady is taking photos (one shot only), one lady is keeping the line moving, people want to meet her and talk her ear off. I just stood there soaking up her awesomeness, but I knew I had to say something. So, I told her that she is one of the reasons why I started a food blog. Which is actually true. 2 lbs boneless, skinless chicken thighs and breasts, fat trimmed & cut into small pieces<BR>
3 potatoes, cut into large chunks<BR>
2 large carrots, cut into large chunks<BR>
1 large onion, cut into large chunks<BR><BR>
<b>Sauce</b><BR>
3 Tbs Korean chili flakes<BR>
2 Tbs Korean chili paste<BR>
4 Tbs low-sodium soy sauce<BR>
2 Tbs mirin<BR>
2 Tbs honey or corn syrup<BR>
1 Tbs sesame oil<BR>
4 garlic cloves, minced<BR><BR>
<b>Garnish</b><BR>
sesame seeds<BR>
green onion, chopped<BR><BR>
In a small bowl, combine all the sauce ingredients and mix well.<BR><BR>
Add prepared chicken and vegetables to crockpot. Stir in sauce and mix well until evenly incorporated.<BR><BR>
Cover and cook for 4 hours on low or 2 hours on high until the chicken is fully cooked. Once done, stir in chopped green onion. Top with sesame seeds and serve with rice.<BR><BR>

LA was an amazing trip and kinda sad it has ended, but also so glad to have returned home. Aside from cooking some meals for my brother, cookies has been requested, especially a batch of <a href="http://ghoth.blogspot.com/2012/06/smore-cookies.html">S'more Cookies</a>. I was home to actually surprise my Mom for her birthday and even though I was the actual present, my Mom could never turn down some cookies. My Mom doesn't like milk or dark chocolate, let alone white chocolate, but thought these trail mix cookies were a "healthier" choice. The boys exclaimed how delicious they were and with my brother's palate, his opinion is definitely important and he never lies to me.<BR><BR>

<b>Trail Mix Cookies</b><BR>

2 cups Flour<BR>
¾ tsp Baking Soda<BR>
½ tsp Salt<BR>
1 cup Brown Sugar<BR>
½ cup Sugar<BR>
10 Tbsp Butter, cubed<BR>
2 Eggs<BR>
1 Tbsp Vanilla<BR>
1 cup Oats<BR>
1 cup White Chocolate Chips<BR>
½ cup chopped Almonds<BR>
½ cup Dried Cranberries<BR><BR>
Preheat oven to 350 degrees. Place oven racks on middle top and middle bottom racks. Line two baking sheets with parchment or silicone liners.<BR><BR>
In a medium bowl whisk together flour, baking soda, salt and oats. Set aside. In a stand mixer combine brown and white sugars. On medium low speed, add in butter and cream until light and fluffy. Add eggs one at a time, mixing for 30 seconds in between. Add in vanilla extract. Slowly add in flour/oats mixture until just combined. Add in white chocolate chips, pecans and dried berries. Mix until just incorporated.<BR><BR>
Place in fridge to chill for 20 minutes.<BR><BR>
Scoop out ¼ cup of dough and roll into a ball. Lightly press into the cookie sheet until 1" thick. Add about 8 cookies per sheet. <BR><BR>
Place cookies in oven and bake about 10 minutes. Rotate and switch cookie sheets onto opposite oven racks and bake an additional 10 minutes or until golden brown. Remove from oven and allow to cool on wire rack until cool.<BR><BR>

I went to LA a couple weeks ago as a surprise gift for my Mom's 60th birthday (Nov 7th) which my brother secretly planned. I flew in the Sunday before and the only people who knew I was in California was my Dad and Jenny. And of course my Facebook and Instagram friends. My brother is extremely busy working 2 jobs, so eating at home is pretty rare. His roommate Kevin also work long hours and homecooked meals are rare, so I thought since I'll be in town for a week, I might as well make dinner for the boys to freeze and reheat for those busy lazy long nights.<BR><BR>
My brother is a huge foodie and has an incredible and memorable palate. My cooking skills isn't <i>that</i> advanced and I was looking for simple meals so we didn't have to spend a fortune buying tools and ingredients to make one meal. A crockpot was purchased and honestly, it's the best purchase he's ever made!
Truthfully, I have never browned butter, so thankfully my brother was home to do that :) What a huge difference it made! The sauce was delicious as is, but wow! Definitely can't wait to make this for the hubby :)<BR><BR>

<b>Crockpot Brown Butter Marinara Sauce</b><Br>

2 (28 ounce) cans whole, peeled, san marzano tomatoes<BR>
1 sweet onion, sliced<BR>
4 cloves garlic, skin removed and crushed<BR>
2 teaspoons dried basil<BR>
2 teaspoons dried parsley<BR>
1 teaspoon oregano<BR>
1/2 teaspoon dried thyme<BR>
1/2 teaspoon crushed red pepper <BR>
1/4 teaspoon pepper<BR>
1/2 teaspoon salt<BR>
8 tablespoon butter<BR>
1 tablespoon sugar<BR>
2-4 tablespoon fresh parmesan cheese<BR>
fresh basil, sliced<BR><BR>
Add the tomatoes, onions, garlic, basil, parsley, oregano, thyme, crushed red pepper, salt and pepper and 2 tablespoon butter to the bowl of a crockpot. Cover and cook on low for 7 to 8 hours (or 3-4 hours on high).<BR><BR>
Use the back of a spoon or a potato masher to break down the tomatoes. If you like a smooth sauce use an immersion blender to puree the sauce or transfer to a blender or food processor and then return the sauce to the crockpot, leaving the lid off.<BR><BR>
In a heavy-bottomed sauce pan add 6 tbsp of butter, melt butter over medium heat until just browned. Butter will melt, foam, and froth, then begin to brown along the bottom. Whisk browned bits off of the bottom of the pan and stir into the sauce. Taste and season with salt and pepper to your liking. Top with fresh parmesan cheese and fresh basil.<BR><BR>

As for cooking, I love my pasta, but my favorite thing to cook? Roasted broccoli/brussels sprouts, one pot meals, casseroles. <b>2. What's your favorite go-to outfit?</b> My go to outfit is always a plain solid t-shirt, a cardigan, jeans and flip flops. I'm simple :)<BR><BR>
<b>3. What's your favorite part about marriage/being in a relationship?</b> To know that I can share my life with someone like Nate. It's been quite a journey I would say. In the last (almost) 10 years, I never imagined I would live in 9 different locations... 3 being my parent's home. I never imagined sometimes being in a part-time marriage with the Army. There has been lots of ups and downs and we always pull through. My favorite part about my marriage is Nate.<BR><BR>

I have started a new journey. I've been <i>working out</i>. I KNOOOOOW right? I recently joined Curves and I'm on week 2, but as you're reading this, I'm on week 3, but I'm actually on vacation in LA.<BR><BR>
I haven't tried too many of the recipes, but these meatballs were really good! I added a bit of salt & pepper and used panko instead. In some of the meatballs, I stuffed some mozzarella pearls in the middle and this is a great dish with some pasta too.<BR><BR>

Baked Meatballs w/ Tomato Sauce & Mixed Vegetables - 2 serving(s)*<BR>
recipe from Curves Complete<BR><BR>
2 slice(s) bread - whole wheat<BR>
1/2 onion(s) - medium<BR>
10 oz beef - ground (95% lean)<BR>
1/2 cup(s) egg substitute<BR>
1 cup(s) sauce - tomato (meatless)<BR>
2 cup(s) vegetables - mixed, fresh<BR><BR>
Preheat the oven to 375°F. Crumble bread into bread crumbs. Dice onions. Gently combine ground beef, bread crumbs, egg substitute, and diced onions. Wet your hands and form into meatballs. Brown the meatballs on the stove, and finish cooking in the oven for 20 minutes, or until the meatballs are cooked through and reach an internal temperature of 165°F.<BR><BR>
Place a steamer insert in a saucepan and fill with water to just below the bottom of the steamer. Cover and bring water to a boil. Place mixed vegetables in steamer insert and cover. Steam for about 5 minutes or until tender.<BR><BR>
Top meatballs with warmed tomato sauce and serve with steamed mixed vegetables.<BR><BR>
<b><i>Tip: 1/4 whole = 1/4 cup chopped onion</i></b><BR>
